This curry is delish! Mother wasn’t right here for dinner, so it was my flip to make one thing. Brown rice had been cooking and I figured some spicy curry with broccoli, leftover grilled veggies, and tofu would hit the spot; because it has been raining all day right here.

  • 1 onion
  • 4 garlic cloves
  • 1 head broccoli
  • 1 grilled crimson pepper
  • 2 grilled zucchinis
  • 2 packages tofu
  • 1 can coconut milk
  • 6 cups vegetable broth
  • 3 tablespoons uncooked sugar (or different sweetener)
  • 3 tablespoons tamari (or soy sauce)
  • 3 bay leaves
  • 3 tablespoons curry powder
  • 1 tablespoon every of coriander, paprika, cumin, turmeric, garlic, and onion powder
  • 1 teaspoon every cinnamon, chili flakes, and dill
  • 1/2 teaspoon chili powder

Methods to Put together Curry With Tofu and Grilled Greens [Vegan]

  1. Put together the tofu: saute it on med-high warmth with a little bit of olive oil, rice wine vinegar, and tamari (soy sauce) till it browns. Put aside.
  2. Chop all of the veggies. In a big pot, saute the onions, garlic and all of the spices along with 2-3 tablespoons of olive oil and 1 tablespoon of rice wine vinegar till they’re translucent and softened. Add the remaining elements, together with the tofu and veggies. Let simmer on low warmth for half-hour or so, till the broccoli is cooked sufficient for you. See should you prefer it!
